      <image:caption>Brian Engdahl’s brewery aspirations started at an early age. Raised by entrepreneurs, he always worked toward opening his own brewery. His drive to achieve this goal led him to a double degree in Fermentation Science and Business Innovation Management at Oregon State University. Brian also acquired an international certification in craft brewing from the Institute of Brewing and Distilling based in London, England. Post-graduation, Brian joined the team at legendary craft brewery Widmer Brothers, where he learned the ins and outs of production brewing and large-scale brewery organization. He then accepted the Head Brewing position at Ancestry Brewing in Tualatin, Oregon—where he helped them grow into an award-winning brewery. Chalice Brewing is the culmination of Brian’s experience, expertise, and energy. As an up-and-coming brewer in the competitive Portland beer scene, he decided on Coeur d’Alene because of its beauty and sense of community.</image:caption>

      <image:caption>Located in a renovated building from 1918 in downtown Coeur d'Alene, Chalice not only hopes to preserve the city’s history but become a part of its future. After two years of renovating the downtown building, removing layers of walls covering the original bricks, and tearing up vinyl flooring to lay extensive tile work, the building is now reminiscent of its former beauty. The patio space, formerly a few parking spaces, was converted into an outdoor stage for local musicians and a seating area to enjoy beautiful Coeur d’Alene afternoons and evenings. Chalice Brewing is currently offering to-go beer sales only. Full-service opening coming 2021.</image:caption>

      <image:caption>Chalice’s brewing philosophy is rooted in the idea of continuous innovation while honoring the past and bringing lost styles and recipes back to light. We see it as stepping forward by looking back. In the Pacific Northwest, we’re surrounded by a bounty of local products that support real flavors from real things. We cherish the beer brewing process and see little benefit in adding artificial ingredients—we let the quality ingredients shine. Because of this, our beer will always taste like beer. We’re not afraid of using every flavor the world has to offer—but, at the end of production it better still taste like a beer. If it’s balanced, you should taste the yeast, the grain, and the hops. We brew beers to style: guidelines were created by the collective brewing industry over time as a shared understanding of what beers should taste like. Even if Chalice brews with an additive like tea or fruit, the base beer underneath will still be to its root style. Chalice Brewing loves being an Idaho brewery and will try and make the most locally sourced beers possible. If the ingredients aren’t in Idaho, they’ll be sourced from the Pacific Northwest before looking elsewhere. We believe that using local products is a more genuine experience and will bring our customers closer to home.</image:caption>

      <image:caption>Campfire Stories Collaboration with Trails End Brewing | Campfire Stories is a traditional Rauchbier brewed in collaboration with Trails End Brewery. Rauchbier literally means "smoked beer" in German, and this beer does not disappoint on its smokiness. We brewed our collab with traditional techniques in mind. We imported beechwood smoked malt from Weyermann® Specialty Malts, based in Bamberg Germany, where smoked beers are still produced in the same way they have been since 1387. Before 1818, when the drum kiln was invented, malt was roasted with direct fire, which made all beer have a smokey taste. The brewers of Bamberg never wanted to lose this taste profile and still roast their malts the old way, to ensure the tradition never dies.
